Plum-stuffed pork rib roast with apple, red wine sauce, and mashed potatoes.

THURSDAY
Pan-fried salmon with green asparagus, Jerusalem artichoke, browned butter, hollandaise, and chervil.

FRIDAY
Cordon bleu schnitzel with tomato cream, frisée salad, and honey vinaigrette.
